We made 2 last year, & one has been clogging up the fridge for almost a year! will it still be ok for this Christmas? Should we just ditch it and start again? Should I just douse it in more alcohol!

Should only need to be stored in an airtight(ish) container like an old biscuit tin, rather than the fridge and should keep for a year.

You can but try it on the day (but have a standby, just in case).

My MIL usually makes  batch that lasts - easily - for two years as they are pretty pickled in alcohol. Yours should be fine.

They easily last 2 years, as long as doused in alcohol! should be better too. enjoy!
